Executive Chef: Rick Giffen
With over 40 years of experience in the hospitality industry and the successful launch of more than 65 concepts nationwide, I have been fortunate to cultivate a diverse array of professional and personal growth opportunities.
My career journey began in the luxury segment in San Diego, leading me to become the youngest Executive Chef and Food & Beverage Director in the history of the Sheraton Corporation in Steamboat Springs, Colorado. There, I proudly oversaw the daily food
and beverage operations for the entire property. After six fulfilling years in the mountains, I felt the magnetic pull of city life and culture calling me back.
In 1994, a series of relocations with an international company brought me to Las Vegas, where I opened the largest and highest-grossing venue in the world. It was then that I decided to call this vibrant city home. I subsequently served as the Executive Chef at the Stratosphere Hotel & Casino for a decade, held the position of Corporate Chef for “Lettuce Entertain You,” and took on various challenging roles, including Executive Chef of T-Mobile Arena. Most recently, I joined the OYO Hotel & Casino as Executive Chef and Food & Beverage Director, where I led the rebranding of the property’s dining outlets until the onset of COVID-19 shifted our plans.
During this time, I embraced the opportunity for new adventures and was invited by a longtime friend to help revitalize a lodge and resort just 30 miles west of West Yellowstone. Now, I am thrilled to embark on my newest venture as Chef and partner at Arizona Rebel RePUBlic, where we are dedicated to creating something truly special. Outside of work, I enjoy cooking for my wife, family, and friends, as well as spending time golfing, traveling, and hiking. My culinary passion leans towards Latin/Asian fusion, complemented by my love for football and golf (Go Chargers & Padres!). I can’t resist a good episode of Seinfeld and find inspiration in rock, alternative, and jazz music. Every day, I strive to create “WOW” moments by mentoring, teaching, and supporting my team with unwavering enthusiasm.
